I added a header image to some of my services, but have decided I would rather it be just the background color instead. There is no way to remove the image. It only gives me a option to change images. How can I remove the image?

Unfortunately there is no button to do so, you will have to go to
wp_amelia_services table and delete pictureFullPath and pictureThumbPath entries.

That is unfortunate. Seems like a bug to me. But this solution will work for now
