Is there a way to schedule appointments outside of the hours allowed to book appointments and yet keep them invisible/unavailable to our customers online?
You can do this for whole services by unchecking Show this service on site, in Amelia > Services > Edit service, and in this way book them only trough the backend.
This cannot be done for individual slots of a service set to be visible on site, I'm afraid.
