I have solved this. It was doing this because I'd indicated a 2-hour span of time for events. Changing it to 30 minutes - even though I want them all to be two hours - fixed the problem. Strange fix.

When booking an event from calendar view on a smartphone, the default phone area comes up as the US (screenshot) How do I make it default to Canada? Strangely, when I view the same thing on a desktop computer screen (screenshot) It defaults to Canada!
You're right, changing the time slot step to 30 minutes will allow you to have this starting time. If you need a time gap of 2 hours, you can always add Buffer Times to your services that can serve as a gap.
For the missing / unsaved text in the notifications; this usually happens when you have some language tools as extensions in browsers.
For example "Language Tool" - if it's enabled, when you edit notifications and save them, they disappear. Please check that, and install a new browser without extensions (Opera, for example), and test it.
If it's working in Opera, it's some Chrome extension causing this.
Please check your phone browser setting if it is set to US or Canada (you can find this in Browser / Setting / TimeZone.
