it would be great if email notifications sent by Amelia are logged in the DB and searchable, for auditing and complaint management purposes

If you have an email address that you'd like them all to go to (besides going towards the customers and employees) you can always add an additional address to Amelia > Settings > Notifications > Send to additional address.
You can also check out our WebHooks to see if that would work for you.
