I've been looking at the Metadata and Description areas for Stripe and PayPal. However, I don't understand where the information comes from, or how to configure them. If there were sample choices available, it would make this a lot easier.

In the new versions, when you enable Stripe in Amelia settings/Payments, there are MetaData and Description fields below. You can use the placeholders that you'd use for email notifications, and they would be forwarded to stripe, like this:

Thank you for that. One more question please: How do I insert a 'break' for an Employee please? I inserted a 30 minute break into an Employee's Work Hours, which did not alter the entire hours for the day. However, on the Booking page, all the previously available days were instantly unavailable.

To add a break you would need to modify it here
but please note that the duration of a working time slot needs to match the duration of the service or else the system will not be able to assign this employee to the service.

Thanks for that – I have done that now. However, where this is seen by the customer? I have gone through the process of creating a sample booking, but the hours are the same. For example, how will a customer know that there is a 30-minute break in a workshop or class?

Brakes are not shown to the customers, they will not be able to book an appointment during this time but it will not be displayed front-end as a break.
