A customer needed to update their phone number from the number they originally used to sign up for an event, so I went to the customer under CUSTOMER tab and entered the correct phone number. It did NOT update the attendee information though. I had to remove the attendee and then RE-add the attendee for it to update.

Please make sure that you have no Employee or Customer user with the same email address that your Admin user has since it can result in mixed permissions which can cause similar issues.
Also, if you have a caching plugin on your site, the previous phone number can be cached there, therefore you should clean the site's cache.
If that doesn't help, please provide us with a temporary WP Admin login, so we will be able to investigate the issue from the inside.
