I have set one of our services (an introductory lesson for non-members) so the default appointment status is Pending. We don’t use booking over maximum capacity, so all of our other appointments default to Approved.
Setting this service to Pending means these non-members can get a different notification when they book. I need this workaround because non-members need different info in a notification than members do.
Is there any downside to using a Pending status in this way? Do these customers also receive an Appointment Next Day Reminder or do I need to switch their status to Approved?
Feature request: Please add the ability to write custom notifications for different Services or Service Categories.

I don't see any downsides to using the Pending status in this way other than the reminder email - it is only going to be sent to "Approved" appointments, so you will need to change the status of this appointment to Approved in order for the customers to receive a reminder email.
The notifications log is currently available only through the database, ao in order to see the log of sent emails, you need to access your database, and go to wp_amelia_notifications_log table (wp_ is the default prefix of the databases, but in your case, it could be anything).
As for your feature request - our developers do have this planned for the future, and it should be implemented within the next 3 months.
