I am unable to setup the time properly. Please, look my screenshot-gif. The thing is that not all slot times are available, and I cannot setup 9:30 or 17:00 for example because this hours are not in the dropdown menu...

This is because you are making a change in General Settings.
Please go to the individual employee and set their work hours, because if you have employees already they may already have busy slots, or work hours for the times you are trying to choose here.

I see it really unfriendly. In fact, is happening me again but now, with the duration of a service. I have a service that last for 1h 30min, and I want to "clone" this service. Now, I cannot select 1h 30min but only 1h or 2h... a little pain in the ass the fact that I cannot choose freely the time but select it (only what Amelia allows me from a dropdown menu).
Any suggestion here?

My apologies; it's the Time Slot Step, actually.
You can find it in Amelia > Settings > General Settings, on the top left corner of the tab.
Adjust it to 30 minutes, to be able to get the start time on half hour mark.
