Can I use Amazon SES as SMTP?

Most probably yes. We didn't test Amazon SES but some of our Customers use it. That's why I can tell you only relying on their experience.

Could you please clarify what you mean by "individual messages"?
Yes, you can set all the notifications on the Amelia -> Notifications page. But please note that it's not possible to send notifications selectively (if that's what you were asking about). So, if you enable them, then all the Customers will be receiving them, not only individually.
