When I edit the availability for Thursdays, the calendar does not change to reflect the chosen times for availability. My employee cannot work on Thursdays except for 5:00pm to 9:30pm and when I make these changes, the dates and times stay wide open on the customer-facing calendar booking end.

Nevermind, I was able to fix this by editing more on the individual employee data record.

Yes, you are right: only Employee's Working hours settings in the Employee's profile affect Service's availability.
