Hello,
I would like to know if it is possible to assign only 2 services per day per employee. That is, even if the employee works for 8 hours, if the first 2 hours are occupied, more services can't be booked with that employee.

I'm afraid, at the moment it's not possible with current built-in features in Amelia.
Also, I can't find a workaround that would perfectly match your requirements.
You can suggest that as a feature request here, or check if this request was already submitted and vote for it.
