FINAL DAYS FOR SUPPORT ON THIS PLATFORM
As mentioned through banners and newsletters, starting Sunday (June 1st), we're transitioning to a new support system that will be available through your store accounts (for premium/paid users) or directly on our product websites – Amelia, wpDataTables, and Report Builder (for pre-purchase questions) through a support widget in the bottom right corner.

How can i change the lable "Please select training" of plugin? I tried by settings and by code too. I can't find it.

The plugin can be translated and strings and labels can be renamed using POEDIT or Loco Translate easily.
I suggest installing Loco Translate, since it's within WordPress and it has a simple UI; just open it, pick Amelia, pick language, and "translate" the label to what you want it to say.

To remedy the problem, you need to modify the strings from the "FrontendStrings.php" file following the path: wp-content > plugins > ameliabooking > src > Infrastructure > Translations > ...

I've checked - you are right.
Our developers are aware of this issue, as it's not only the case with Italian language but with a lot of languages that have multiple grammar cases. For example, our language (Serbian) also can't be translated correctly using the PO files, since the strings are split like this, and if you make it work correctly for one use case, it will break something else.
At the moment, the PO files cannot be altered to suit your needs, but our developers are in the last stages of testing the new Customize feature.
This feature will allow you to edit each string on the front-end, so if you want it to say "Do you want some ice cream?" instead of "Please select service", you will be able to change only that, and it will not affect anything else.
I understand that this is a pressing matter for you, and you need it fixed, but at the moment, we're not able to switch our focus from releasing the new feature to completely re-map the PO file and have it look at each word separately. This is a task that will be resolved in the future, but the issue you're having will be resolved much sooner. If everything goes according to plan, the new Customize feature should be included in our next major update - hopefully by mid-June.
As development is often delayed by unexpected issues, conflicts, and bugs, I can't make any promises, but the only thing I can promise is that it will be resolved soon. Also, I can show you how it's going to be (in Serbian, though):
