I'm afraid, Amelia has no such built-in features at the moment but probably it can be achieved with a workaround.
I'm not sure how it's supposed to work but if you want your customers to pay for an appointment without actually booking it at the moment of the purchase, then probably you can create a Package that has only one Appointment in it, and the Minimum/Maximum bookings required are set to 0. Theoretically, it should work this way. Also, we can hide the strings that state it's a Package with custom CSS, so there should be no confusion.
