I am sorry to disappoint you, but unfortunately, something like this is not possible with the plugin's built-in features.
The columns you choose to be collapsed will be used for all users, and at the moment there's no way to change this behavior.
I will forward this suggestion to our development team, so they can work on it for one of the future updates, but I can't make any guarantees that it will be included in the plugin, or when.
I'm creating a table with quite a few columns, so will be collapsing most of them on mobile to avoid horizontal scrolling.
The problem is, which columns to collapse depends on what each individual user is most interested in seeing.
Is there a way of allowing the user to choose which columns should be collapsed on mobile?
