is it possible to set preselect the recurring option for a service and the days in which the appointment is repeated (set weekly repeat, and I want sect all week days except Saturday and Sunday)? I yes, how?

Unfortunately, it's not possible at the moment to pre-select the recurring service; it's optional for the client.
You can determine the days if your employee for that service works on that service Monday to Friday, and doesn't work on that service on Saturdays and Sundays.
