If you want to show all employees, you only need to add [ameliabooking] shortcode, without the "employee" filter.

At the moment, you can only hide the employee select box with some custom CSS:

.am-select-employee-option {
display: none !important;
}

This will leave the "Any employee" selected by default, so your customers wouldn't be able to choose the employee, only continue to the calendar.
