It may happen, as in our case, that we need to enter appointments for people who do not have an email, such as elderly, but only have a telephone number.

I am sorry to disappoint you, but unfortunately, something like this is not possible with the plugin's built-in features.
Emails are mandatory in the back-end, as new customers will be saved in Amelia's database table wp_amelia_users. At the moment, there's no way to disable emails as a mandatory option from the back-end.
