Amelia tries to assign all the appointments to the same Employee by default, but if he/she is busy, then a time slot with another Employee will be picked. Otherwise, the same Employee will be assigned to all the bookings (if they are being booked altogether at once).
You can suggest that as a feature request here, or check if this request was already submitted and vote for it.
