Hi there, sometimes when a customer book an appointment, she gets access to the whole customer panel as if she is the Wordpress admin, so she can see all the bookings and settings as the system send her an email with the access. Can you help me?
Note: Everytime i create a new customer I select Wordpress customer.

A customer that logs into the Customer Panel, and can see all details in there is surely logged in your WordPress as an administrator. There's no way that a customer that booked an appointment from the front-end, while not logged into WordPress would be able to see this.
Did you maybe make the booking in the customer's stead? If you did that, the customer's email address has been linked to your admin email, and that's causing the issue.
How are you creating the customer, and which WordPress user are you linking to that customer? If you enabled the Customer Panel, you don't need the WordPress user for that customer, since they can do everything from the panel.
