It's not recommended to add the "Amelia Employee" user role to your existing Administrator users, as that will cause issues with capabilities in the plugin.
To link an employee with an existing WP User, you would need to install "User Role Editor" plugin, and add the "Amelia Employee" user role to your existing (non-admin) users.
Is there a way to map current admins or other roles as "employees" or will that require a separate plugin?

So setup an admin as a secondary "Employee"?
Kind of, yes, just make sure not to assign any additional user roles to the Admin.
So, "administrator" needs to remain an administrator, and nothing else. You can create an employee with the person's alternative email address.
