Hi,
In our salon, the bookingis allowed from our website. But more than 60% of our clients continue to call us to take an appointment.
In our website, we would like to require the EMAIL & Phone number in order to be able to contact the client. But when the client calls we do not have time to require and enter the Email & Phone.
So is it possible to set EMAIL & PHONE as mandatory fields only for the web usage and not when an appointment is taken from the AMELIA ADMIN interface (ie when the client is calling us to take an appointment) ?

I am sorry to disappoint you, but unfortunately, something like this is not possible with the plugin's built-in features.
The same rules apply to both the front-end and back-end booking forms, so you would not be able to do that. You can add a dummy email address to the customer to bypass this.
