For the totals function (column or shortcode) DataTables shows the funky sum symbol (e.g. ∑ = 155.00). How do I change the settings so that it just prints the value and not any of the symbol formating?

You can remove the SUM symbol by following the advice from this ticket: https://tmsplugins.ticksy.com/ticket/2545174/
When you update the plugin, the code is replaced and it needs to be changed again.

Can an option be added in table / column settings to display / hide the symbol, or replace it with a user selected symbol? For example, I'm summing up a column of costs in $ so I would like the total value to be displayed with a $ symbol such as $49.99.

You can change the SUM symbol in wpDataTables main settings
but unfortunately there is no option for turning this on or off on a click of a button.
Hey, thanks for the suggestion. It does help somewhat, but only marginally.
I would like to put in a feature request that those calculated totals setting (sum, average, min, etc) be added to the table column settings. It doesn't work as a global setting because I may have two different columns with different units that need to be summed. For example, one column may be dollars ($) that I need to sum and the column next to it might be pounds (lbs). Thus I need to be able to set the totals prefix on each column.
Does that make sense? Can I put in a feature request to add those settings to the column settings?
