Is there any way Amelia can work with "Global Payments" as a payment gateway instead of Stripe etc?

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
At the moment, you can only use PayPal, Stripe and WooCommerce. If this Global Payments works with WooCommerce, as an add-on, you could use it.
