How can I give a new customer the option of creating an account so they can login for future appointments?
Currently I'm creating the accounts myself, but I was wondering if there is an option to have them do it themselves

I'm afraid, at the moment a Customer's account can be created only after the first booking. The logic behind that is quite simple: before the first appointment is booked, a person can't have the Customer status.
You can suggest that as a feature request here, or check if this request was already submitted and vote for it.
