Is there a possibilty to add a rule (like creating a postal code prior to assign an apointment to an employee?
One of our services is a Foursent Dog Walker service where local dog walkers only wants to walk within a certain postal code. When we have a new registered customer on Wordpress we would like to connect the customer with the assigned employee of the postal code.

I am sorry to disappoint you, but unfortunately, something like this is not possible with the plugin's built-in features.
The only option here would be to set the default appointment status to be "Pending", and add a mandatory custom field to your services and/or events. That custom field would require the customers to add the postal code, so based on that info, your employees would be able to accept or reject the appointment.
