I would like to show more information about employees in the front-end, it could be raw text o html extra data that I want public for my customers.
Is there any way to add more fields to employees?
Is there any way to show one page with the information of the employee itself? I mean, I see a list of employees while adding an appointment but I cannot see details of one specific employee anywhere in the front-end

Unfortunately at the moment we don't have an option to create employee profile that would be public.
You can suggest that as a feature request here, or check if there is such request there and vote for it.
