Is it possible to have a service that changes it's price when it's booked in the evening or weekend?

I'm afraid, it's not possible to set dynamic prices in Amelia at the moment. You can suggest that as a feature request here, or check if this request was already submitted and vote for it.
However, you can use a workaround: you can create Services with different prices and make them available only on weekdays through Employees' working hours. It might be a bit time-consuming but it will have the same outcome.
