Is there a way to force the customers to select at least 1 extra for specific services (and prevent them from going to the next steps until at least 1 extra is selected) ?
At the moment, something like this is not possible.
Our developers are working on implementing this in one of our future releases. I can't say when it will be included in the plugin, but it certainly is planned.

As you said, jokes aside, it will surely be of help to you and a lot of our other users. I do hope that we'll be able to do it within a month or so, but I can't make any promises.
