I have some services that start next month. I want customers to be able see the service and be able to book them for that later date.
How do I remove availability from the calendar for a service until after a specific date in the future?

There isn't such possibility in Amelia with its current built-in features, unfortunately, current view can only show the current month, or have the current day preselected.
You can suggest that as a feature request here, or check if there is such request there and vote for it.

So what happens if an employee who usually offers 3 services, but for one week they are not offering one of the services, perhaps due to no available facilities.
As they are still offering the other 2 services, what do we do?
We cant delete the service as people will still be able book the service for the following week when it resumes?

unfortunately, we don't have a workaround for that - entering days off would result in all 3 services being unavailable for the certain time span.
You can hide that particular service from the website until that time.
