You're the only coach, so you need the books time slots to be unavailable for further booking, is that correct?
If so, that's how Amelia works by default, so there should be no issue.

So, to sum up: you use group classes, and want the same time slot to be available for more than one booking, is that correct?
In this case, please enable the "Allow booking below minimum capacity" option in Amelia -> Settings -> Appointments:

That's correct: it's not possible to book multiple appointments from different packages for the same time slot if they are assigned to the same Employee. Normally, that's exactly what companies require: to avoid overbooking. That's why your requirements were not clear for me in the beginning.
In this case, it can be set only through a workaround: Yoy can create multiple Employees who in fact will be the same Employee - you. In Amelia, each employee should have a unique email address, so there's a trick to use the same email for all of them: this can be solved if you use Gmail by adding +number before @ for the same email address (like [email protected], [email protected], [email protected], etc.) and then you will be able to create different email addresses but all emails will go to the same email address. I'm not sure about all the email services but it works flawlessly with Gmail.
Then, you can assign different Services to "different" Employees, so they will be available for the same time slots.

I'm glad this solution matched your requirements.
The only way to see all the appointments with the current built-in features in Amelia is to do it under Admin or Manager role on the back-end. If you want to manage all your appointments on the Employee panel, then there's a limitation in Amelia that allows an Employee to see and edit only his/her appointments. And also Admin and Manager can't access the Employee panel. In this case, you can try using the User Role Editor plugin. I can't tell you precisely but this plugin can extend Employees' permissions on the back end (so they will be able to see all the appointments, for example), therefore, I believe, it will work for the Employee panel as well.
Regarding hiding Employee selection drop-down: It can be hidden with custom CSS. Please provide me with the URL to the booking page, and I will send you the correct CSS for that.
