Hello please for the above website, the website has one service but has about 4 types of the service and different pricing for each of the type of the same service.
For example. The Service is Covid Test
And the types are;
General Testing: £120 Fit to Fly: £120 Test to Release: £120 Day 2 and Day 8: £210
How do we make it in such a way that when the person clicks on a particular type the payment shows the pricing for that particular type.

You can sort the prices by Employee, however, if you wish to have them displayed directly, it is the best to subcategorize by making your service into a Category instead, and then let services be different types of services under one category, that will be differently priced.
Please does it mean that I cann create categories under categories and how will the user be able to choose a category from the form will they all appear on the form, because my current form does not display the service type and the description on display
Yes - you can have multiple categories, and then put multiple services under one category.
Sure, you can set up one employee to work in multiple services. Just please bear in mind that if this employee is booked for one time, example today at 6pm in one service, this time today will become unavailable in other services, as employee cannot provide multiple services at the same time.

We unfortunately don't have "sub" categories at the moment; the categories go as follows:
Categories > Locations within one category > Services within one category > Employees within one category.
Does this mean that we cann only put services under categories?
And cann one employee belong to many services as well?

You can have as many employees on one service as you need; and they can all charge different prices for that service, if you wish.
