Thank you for the videos, unfortunately, video formats cannot be opened on our software - please let me know the following:
Are you logged in as an Admin, or a Manager role into WordPress, as Manager does not have the same abilities as Admin? Can you please advise which service did you manage to edit, and are you editing in Backend or from Employee Panel (because employee can only edit the services they are assigned to in Employee Panel).
If you checked those points, and issue persists, please provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party.
You can write credentials here just check Private Reply so nobody can see them except us.

As for the services, have you cancelled the active appointments? If not, you would not be able to delete the service with active appointments.
While hidden it will not be available for booking, so you can wait for the appointments to expire and then delete the service when all of the appointments expire.

Yes, for every service that still has an active appointment, it would be necessary to either:

Regarding notifications:
I see that you have appropriate emails for both "employees"; do you have access to these email addresses?
If so, issue with email notifications could be caused by several reasons:
1. Your hosting provider is blocking all 3rd party settings, and only allowing their SMTP (or other) settings.
2. Your website has PHP version less than 7
3. The credentials are not correct
4. There's something else blocking the notifications from being sent.
5. If you're using Gmail, please make sure "Allow less secure apps" is enabled.
Please check these points, and let me know if you were able to resolve the issue.
Also please check if these notifications got into Junk or Spam folders.
