If you look at these sets of emails you can see that despite being for the same appointments they are an hour apart from one another, most likely due to a daylight savings bug.
One email is using the shortcode: %appointment_date_time% The other is using: %appointment_date% at %appointment_start_time%
Since Amelia doesn't have any time zone settings, it inherits the time zone from WordPress. If your time zone is in UTC+/- format, please change it by selecting the city near you.
If you leave UTC+/- format (for example UTC+1), that will remain the same after the clocks go back one hour. So, this time zone is a fixed time zone, and it doesn't update according to Daylight Savings Time. When you select the city you're in, the time zone is automatically updated.

I have my time zone set to Denver, and "Show booking slots in client time zone" in Amelia settings is ENABLED. However, despite showing correctly on the front-end of the site, in the notification email the dates for a 4-week class on Zoom that are scheduled for AFTER Daylight Savings begins, show the wrong time (an hour too early). Zoom also shows the correct times when I look into my list of meetings. The problem is ONLY in Amelia notifications. How do I fix this? It's a big issue with clients showing up early/late when Daylight Savings begins and ends. FYI, the shortcode I've been using in my email is %zoom_join_url_date_time%.
