Can I use amelia booking for Rent room like coworking space or hotels? . because I see review on youtube mostly in the service tab we must assign employee. can I hide the employee field for rent service? because rent service don't need employee

Yes of course; Amelia does require connecting an employee to a service (in this case service would be the rent, and employees would be rooms), however, you can rename employees to Rooms and resolve this.
