I just started configuring Amelia and I have the following situation:
a) Default users
b) Groups (Family's, School Groups, Groups of retirees,...
c) People with special needs
And the prices depend on age (underage vs adult).
When it comes to default users I want them to proceed to the checkout page where they have to pay for the service.
1. Is it possible to manage different prices depending on age?
2. How to manage different roles? For example: I have a default user who can only buy a ticket (he has to pay right away on the checkout page), and I have a teacher who books/makes an appointment (he doesn't have to pay). Is it possible to assign different roles during the appointment/booking process? Or do I have to ask the customer/company to register prior to the appointment? Should I make different wordpress roles or can I achieve the same via Amelia customers roles. What's your recommendation? Did you have a similar question regarding roles?

Unfortunately, Amelia doesn't have any similar features, so what you're looking for to achieve is not possible.
You would need to create separate services, with different prices for default users, adults and children.
Also, you can utilize features of some membership plugin, with which you can hide front-end pages for certain users. For example, if Service #1 is for default (logged-in) users, you can add its shortcode already filtered, like [ameliabooking service=1]. Then, with a membership plugin, block that page for all non-logged-in users, so only those who are logged in can see and book through that page.
