it seems, that it causes difficulties/errors using a - (hyphen) in the employee-passwords. Can you confirm this, and are there any detailed password-requirements or -restrictions?
There are the same requirements that WordPress has: Employee panel password can include numbers, capitals, special characters (@, #, *, etc.). I just tested a password with a hyphen for Employee Panel access and there was no issue.
What kind of error your Employees have? While logging in for the first time or resetting the password? Please note that the Admin should set the password in the Employee's profile to let the Employee login to the Panel for the first time.
