All my employees live in a different country - hence showing only one Time Zone in Amelia Admin area is confusing for my employees, resulting in missed appointments etc.
How can I display Amelia backend and appointments in the employee's time zone?

Unfortunately, what you're trying to achieve is not possible in back-end, since back-end times are inherited from WordPress' general settings.
You can configure the front-end Employee Panel, and have your employees work with their appointments through there.
