I am a web designer and wanted to install a fleet reservation for a nautic club.
I like the step by step booking system, but I would like to also have the full calendar (Planning in french) available in frontend, how is it possible? I saw that someone developped a plugin with this feature (wpamelia essentil shortcodes) but there are not working.

Probably, our newest feature Events Calendar view will match your requirements (but, as you can get by its name, it will work for you only if you use events and not Services). You can see more details here.
Otherwise, the closes option for Appointments is the Search view.
