I have attached a few items, with the first error message I am receiving is from trying to upload. When I Publish and then upload a Google Spreadsheet, I receive that error.
The table will show in my wp data tables, but its missing entire column info that shows in my google sheets (attachment Error2 and Error 3)
It is very important to have this working properly as it was working before.
I use Elementor as Theme editor with Wp Data Tables.

I'm glad to hear the original issue was resolved.
When you enable "Limit Table Width", the table is shrunk to fit the page, so you won't be able to display all columns with this approach (since you have a lot of columns) - they'd be there, but they wouldn't be readable (just like they currently are on your website).
So, in order to see all columns, you need to enable Scrollable feature (after you deactivate "Limit table width"). When you enable that, though, you will not be able to change the width of a column - it's automatically expanded to fit the longest cell. "HS" and "State" are there, but they're shrunk:
You could also try enabling he Responsiveness feature on the table, and choose which columns will be hidden from front-end on tablets. Then, in wpDataTables settings, change the width of a tablet to be a big value (2.000 for example) - this will force the plugin to see all screens with width below 2.000px as tablets, and would collapse these columns below the first column.

would it also be useful to use the plugin that shows pop up info?

We don't have any integration with popup plugins. The ones that our customers used in the past caused issues with wpDataTables. For instance, they did work, but when you hover over an element (column, row, header, whatever), that popup would never disappear.
I am not aware if there are any popup plugins that are not in conflict with wpDataTables.
