I do tests on my site and despite the fact that I authorize the deletion of a profile , the function does not appear (1). You can only see the Delete Profile button if you are not logged in into your Administrator WordPress account.
I suggest opening a Private / Incognito window, by right clicking the link you get in the email for the Customer Panel and choosing Open in a Private / Incognito.
Also, please note that when you are testing this feature, you need to use an email that is not your Administrator email. The system is set up this way because your email will connect your Amelia Customer panel and your Administrator account, and by not showing this feature when you use your Administrator account, you're not under a risk to have your account for WP deleted.
The phone numbers are usually not visible on the dashboard, yes, only names and emails. You can go to Amelia > Customers to check a customer phone number.
The postal code / email integration is currently not an existing feature; you can send it as a suggestion to our features request page, so that we can consider it for future implementation!
Did you refer to the Customer panel for the birth date? It does not show in the Amelia > Customers immediately, only when you go to Edit the customer. Please let me know if this is the case.
Sorry to disappoint you but at the moment we do not have an option to limit the users based on age entered.
No the date of birth does not actually appear even by clicking on edit client.

That is very unusual, as birth date is mandatory to appear. Can you please provide me a temporary WP-admin login for your site where this happens, so we could log in and take a look ‘from the inside’ as that’s the most efficient way to see and resolve the issue.
We do not interfere with any data or anything else except for the plugin (in case that’s a production version of the site), and of course we do not provide login data to third party.
You can write credentials here just check Private Reply so nobody can see them except us.
