#1 Will this create problems with wpDataTables considering it's a dynamic database?

Sorry for the late response.
We are located in Serbia and our working time is from 10:00 to 17:00 CET. business days.
So far some chasing issues are related to a server that has cache options that compressed files on their logic and in some cases provides some errors for serverside tables. You can try it and if there is some issue then you can white list the page where are our tables and the issue will be solved. yOu will need to find if that plugin or server has this option and how to implement it in this case.

Building on this: I currently have 1,000 rows in my Gravity Form and about 80 columns for each row.
Will wpDataTable be faster if it reads an SQL database, or it makes no difference to speed if the data comes from an SQL database or a Gravity Form?

Tables created with the Gravity Forms add-on are SQL query based tables, you just don't see the query because it is done programmatically in backend. Meaning, the loading times will be the same even if you create an SQL query based table.
You have a lot of data - not too much, but a lot, so loading times will increase with the number of entries in the form. The plugin needs to go through multiple database tables of Gravity Forms, and it takes some time to do it. The speed also depends on your server's performance and hosting plan.
