I will be happy to answer your questions.
1. Understandable; it is very important that a client has a feeling of safety. As the First Name / Last Name are obligatory fields, since Amelia needs a way to recognize a client info in order to "attach" them to the appointment they chose, perhaps we can make a workaround.
Client is free to create an "alias"; make up a name specifically for the purpose of appointment (such as John Doe, most commonly used name for an anonymous person; Amelia will also accept single letter names such as NN).
E-mail field is not obligatory. You can remove it by going to Amelia > Settings > General Settings, and disable the Set email as a mandatory field. You can do so for the phone number (disable or enable Set phone as a mandatory field).
2. Yes, users have a Customer Panel, and consultants have Employee Panel. These are both activated and managed trough Amelia > Settings > Roles.
3. User and consultant are accessing the appointments separately. In the Roles I have mentioned previously, you can enable what client will be able to access and manage, and what will consultant be able to access and manage.
