This happens in case customers are logged in to WP or to the front-end customer panel, so the booking form recognizes the logged user and pre-fills their information. It isn't possible to disable this, unfortunately, you can book appointments for other customers while logged out from WP/customer panel or in an incognito mode.

Hi, after the first booking, customers can no longer overwrite their data in the text fields. Can I turn off this feature?
