I have an event that is from 6/7/21 - 6/11/21 and one that is from 6/7/21 - 7/16/21. The event that is on 6/7/21 - 6/11/21 displays before 6/7/21 - 7/16/21 when display all events is used. How can I get event 6/7/21 - 7/16/21 to display before 6/7/21 - 6/11/21?

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
Since the first event ends 6 days before the second one, it is going to be on top, and it can't be moved below the event from 6/7/21 - 7/16/21
