I was wondering if there is any way to give a more user friendly name to sql tables and related columns, when they are showned in the sql table list (see the screenshot attached).
I was think to a function like the following, but I do not know it can be connected via hooks:
echo str_replace("wpoa_amelia_providerviews","Amelia Provider","wpoa_amelia_providerviews");
I was also wondering how to change or remove the lt "New wpDataTable" input value.

I am sorry to disappoint you, but unfortunately something like this is not possible with the plugin's built-in features.
That is how the tables are saved in the database, and I would not recommend changing that. What you're trying to do is custom work, which is not included in the provided support for the plugin, so I can't help you with that.
