I need to know how to change the appointment time of an appointment where more than one attendee is allowed, but only one of them needs to be rescheduled.
If I change it in the appointment it changes to the 2 attendees.
You would need to cancel the customer that wants to reschedule, and then create a new appointment for that customer, or add that customer to an existing appointment for multiple people.
I have already tried it this way but if I make the new appointment from with Amelia Manager it appears as payment on site or pending payment (we have payment with Woocomerce obviously the appointment is already paid).
Unfortunately, that's how the plugin works at the moment. You can't hold your customer's payment info, so you wouldn't be able to create a new appointment with any other payment method other than "On Site" when creating an appointment from back-end.
Given that the customer already paid, you could create a new "On-site" appointment for the customer. I'll forward this to our developers, so they can create some relation between rescheduling appointments that are already paid.
