That depends on how you're pulling the data. If you're pulling the data from the database, you could save the Date column as "string", which would allow you to add %CURRENT_DATE% placeholder as a predefined filtering value.
That would display the table per the current date at all times. Also, you could do it through the query, if you're creating a table from the database.

You see, in the date-type columns, the only available filter is date range, so you would be able to enter a predefined date range. But if the date is returned in the format set in wpDataTables settings, you can save that column as string, in which case you can use this placeholder.
