As for custom work, unfortunately our developers are very busy at the moment, working on some priority tasks and fixing bugs and issues with our plugins, so they won't be having the time for custom work in near future.
But we can recommend these services for customization:
Amelia is allowing multiple Pending appointments to be booked although capacity is set to 1 for the employee.
We tested the issue on our old Amelia instance (on a deprecated site) and it does not allow the second Pending appointment to be booked.
When we set the default appointment status to Approved, it does not allow double booking.

Please go to Amelia's Appointment settings and disable "Allow booking above maximum capacity".
