We are seeing that if 1 customer books an appointment and then cancels it, and then a 2nd customer comes and books an appointment for the recently cancelled time slot, the system is combining both of the customers information in the system. Is there a fix for this? have you seen others experience this issue?
That's not an issue that needs to be fixed. It's there for logging. A lot of our customers wish to see which customers cancelled the appointment before another customer booked it, and used it.
The cancelled customer is in red, and you can see that that customer's cancelled.
You can only edit the appointment and delete the customer from the list. If you don't need the cancelled customers to remain in the appointment, you can remove them.

Is there a way to not see the cancelled appointments?

You can only edit the appointment and delete the customer from the list. If you don't need the cancelled customers to remain in the appointment, you can remove them.
