Currently I use the pluing Booked to carry my appointments, and I would like to know if there is any way in which I can migrate the more than 500 patients that I have defined in Booked to Amelia or, at least, if there is some way to load the patients in batch through a cvs file?
There isn't a possibility of importing customers to Amelia , unfortunately.
Maybe it can be achieved by adding them directly to the database - but this isn't suggested and can be done only if you know your way around databases, and we can't help out with that - we don't have queries for that.
Customers are created automatically when they book an appointment in Amelia, if that could help out.

I'm sorry to hear that there is still no way to migrate data from other applications, and not even from CSV files, since those of us who have decided to leave our old appointments plugins to use Amelia, will have to carry the problem of transferring our current clients as transparent as possible.
In view of the fact that I will have to assume the migration manually, at least of my active patients, who are about 40, I would like to know how can I carry out the manual process, without asking my clients to re-register? (Considering that all they are registered as WordPress users).
Unfortunately, there isn't. Manually, you can only create them in the back-end of Amelia, on the Amelia -> Customers page and connect them to WP users with the corresponding option when you create the customers in Amelia. Like I mentioned earlier, this can maybe be achieved by directly adding them to the database, but only if you know your way around databases and SQL queries, as we can't help out with that and don't have SQL queries for that.

This plugin directly uses WordPress user management, so those who take an appointment must be registered in WordPress, and if they access the facility to create appointments, Booked asks for the basic data, and automatically creates the user in WordPress. In fact, Booked does not handle clients directly, but Wordpress does.
The way Booked works allows me to have menu options, hidden for non-customers. For example, the appointment panel, make a payment or notify a payment, and the truth is that it is something that I really like, because it simplifies the menus.
From what I understand, and correct me if I am wrong, Amelia lacks an interface that allows her to create users in Wordpress, so someone could register to make an appointment, without necessarily being registered or logged in WordPress, which I think It will avoid me from having specific functionalities for the clients registered in my portal.
I'm actually quite new to Amelia and I don't know if what I'm saying is right, in any case, I will be very grateful if you explain me in detail how Amelia's interaction with WordPress user management is, and if there would be any way to ensure that all users who interact with Amelia are created as WordPress users, in order to manage user access based on whether or not they are logged in to WordPress, as I do today with Booked.
I am willing to sacrifice certain Boooked facilities for a more complete plugin, such as Amelia, but I want to know if there is any way to implement certain restrictions for unregistered visitors.

You can connect customers in Amelia to WordPress users only in case they have the Amelia Customer user role in WordPress, so you need to have a WP User with an Amelia Customer role in WP and then they will show up in the list for you to choose to connect the customer to a WP user.
There isn't such connection between Amelia customer and WP user in which when you update one the other would be updated, or if you have some information saved for this WP user these information would show up for the connected customer in Amelia. The connection is created only for creating a WP user for the Amelia customer, if this is needed for the user, and in order for them to be able to login and manage their appointments in the back-end of WP (and this was more useful before we released the front-end Customer panel, as now customers can see and manage their appointments in it on the front-end). If the option Automatically create Amelia Customer user in AMelia -> Settings -> Roles Settings is enabled they will be created as WP users as well, and if it is disabled they won't, in this case they will be created only as customers in Amelia.
